Farm-raised Lamb Chops with Spring Carrot and New Potato Hash

For Lamb:

6 to 8 | lamb chops, about one-inch thick, ask your butcher or your farmer to cut them for you. | |
1 | Tbsp. of each; rosemary and sage, minced | |
2 | Tbsp. extra virgin olive oil or butter |
DIRECTIONS
- Remove lamb chops from packaging and trim any excess fat from them if desired. Season all sides with fresh herbs, salt and freshly ground black pepper.
- Heat a large sauté pan over medium-high heat with olive oil or butter and add chops to pan. (Note: If you leave extra fat on the chops, place the fatty side down first in the pan) Reduce heat to medium. (Note: Best to cook the chops in batches to avoid overcrowding in the pan. You’ll get perfectly sautéed — not steamed — crispy brown chops this way.) one-inch thick chops will take about 4 to 6 minutes per side for medium rare. Once done wrap chops in foil for 5 to 10 minutes to allow juices to redistribute. Serve with carrot and potato hash.

1 | bunch spring carrots, or 8 to 10 carrots, tops removed, peeled and chopped |
1 | lb. new potatoes, cut into wedges or bite-sized pieces |
1 | yellow onion, cut into a medium-large dice |
2 | Tbsp. extra virgin olive oil or melted butter |
1 | bunch of parsley, chopped coarsely |
DIRECTIONS
- Preheat oven to 375°F.
- On a large sheet tray, spread chopped spring carrots, new potatoes and diced onion. Sprinkle with olive oil, or melted butter, parsley and salt and pepper.
- Roast veggies in the oven for 30 to 45 minutes, mixing them to prevent burning.
